TACO PIE RECIPE

Taco Pie Recipe

Ingredients
  • 1 lb hamburger
  • 1 tube crescent rolls
  • 1 pkg. taco seasoning
  • 1/2 c. water
  • 1 c. sour cream
  • 1 c. Cheddar Cheese
  • 1 c. crushed nacho cheese chips I use Doritos and Taco chips
Instructions
  1. Brown hamburger. Drain excess fat.
  2. Add taco seasoning and water; simmer for 5 minutes.
  3. Place crescent rolls in a greased deep pie pan; flatten to cover bottom.
  4. Layer on the crescent rolls, the hamburger mixture, sour cream, cheese and crushed chips.
  5. Bake for 25 minutes at 350 degrees F.erent that every generation seems to love.

Baked Parmesan Crusted Chicken Recipe
Baked Parmesan Crusted Chicken, a perfect chicken finger recipe for dinner tonight! Kid friendly and super easy to make



Ingredients : 
  • 4 Chicken breasts boneless, skinless
  • 1 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons minced parsley
  • Salt & pepper to taste
  • 3 Tablespoons melted butter
  • 3 Tablespoons fresh lemon juice
  • 2 garlic cloves minced
Instructions : 
  1. Preheat oven to 350 degrees.
  2. Chop up your parsley and garlic.
  3. Slice the chicken into "fingers" - cutting lengthwise and cutting thicker pieces in half again, for even thickness throughout.
  4. Mix the bread crumbs, parmesan cheese, parsley, salt, and pepper together in a shallow dish.
  5. In a second dish, mix the butter, lemon juice and garlic together.
  6. Dip both sides of the chicken in the butter mixture, and then repeat with the crumb mixture until the chicken is fully breaded.
  7. Place the chicken in a casserole dish or cookie sheet and repeat with all chicken fingers.
  8. Bake for 20-25 minutes until an inserted thermometer reads 165F.
Notes
  • Chicken is amazingly easy to make!
  • This is a twist on a classic chicken fingers but done in the oven instead.
  • The Parmesan helps the flavor and seals in a moist chicken.
  • Fried chicken is great, but you will not be disappointed with how your panko turns out

Coconut Tofu with Spicy Sauce

To all my coconut peeps, I’ve got some sweet, spicy, crunchy goodness for ya today!!


You’re going to start with a basic breading technique. You’ll mix the sweetened coconut into the bread crumbs. Why use bread crumbs at all you ask? Coconut alone will not coat all the tofu. You need the crumbs to get in between the small spaces that the coconut fails to coat.



Once all of your tofu is breaded, you’ll pan fry on each side until golden brown and crispy, about two minutes on each side.
The sauce is very simple. Just three ingredients mixed together and you’re done! I would make the sauce ahead of time so it’s ready to use just as the tofu is coming out of the pan.

Coconut Tofu with Spicy Sauce Recipe



Ingredients
For the Coconut Tofu
  • 14 ounces firm tofu, dried and cut into 3x2 inch pieces (see photos)
  • 1/4 cup all purpose flour
  • 1/4 cup almond milk
  • 1 egg
  • 1/2 cup bread crumbs
  • 1 cup sweetened coconut flakes
  • 1/2 cup vegetable oil for pan frying
  • Salt and pepper to taste
For the Spicy Sauce
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons Sriracha
  • 1/4 teaspoon ginger
Instructions 
For the Coconut Tofu
  1. Whisk milk and egg in a small bowl to make an egg wash.
  2. Combine bread crumbs, coconut and salt and pepper in a small bowl. Measure flour out onto a! shallow plate
  3. Coat one piece of tofu in the flour, then in egg wash. Then coat completely in bread crumb and coconut mixture.
  4. In a large skillet, heat oil on medium heat. Once the oil is hot, add coated tofu. Cook each long side until crispy and light brown, about two minutes on each side. Serve immediately.
For the Spicy Sauce
  1. In a medium bowl, whisk together Sriracha, mayonnaise and ginger. Refrigerate until ready to use.

Ingredients
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 TBLs sugar
  • 1/2 tsp cinnamon
  • 2 eggs
  • 1/3 cup milk
  • 1 tablespoon melted butter
  • 1-1/4 cups diced peaches I used 2 fresh peaches which came to a little over 1 1/4 cups of peaches
  • granulated sugar in flat-sided bowl or a powdered sugar glaze
  • oil for fryer or deep frying pan
  • Powdered Sugar Glaze
  • 1 cup powdered sugar
  • milk enough to make a drizzling consistency.
  • Whisk the milk and confectioners sugar together until the desired drizzling consistency.
Instructions
  1. Using a whisk, combine flour, salt, sugar, cinnamon and baking powder. Whisk in eggs, milk and butter. Fold in peaches.
  2. Heat oil in fryer or pan to 375 degrees F. With long handled ladle, ladle about 1/4 -1/2 cup batter into hot oil. The batter will sink at first and then rise. Cook for about 2 - 3 minutes, depending on size of fritters. Remove fritters from oil with long-handled tongs. Quickly drain on paper towels or newspaper. Then place fritter in bowl of sugar or glaze fritters. Coat with sugar on both sides, or glaze tops of fritters.

Sticky Sesame Cauliflower Recipe

Ingredients

  • 1 small head cauliflower, chopped (6 1/2 cups florets)
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup pure maple syrup, honey, or agave
  • 1/4 cup rice vinegar
  • 1 tbsp minced garlic
  • 1 ½ tsp toasted sesame oil
  • ½ tsp powdered ginger
  • 1 1/2 tbsp cornstarch or arrowroot
  • 1/4 cup water
  • sesame seeds and scallions, for garnish

Instructions

  1. Preheat your oven to 450 F. Grease a baking pan or line with parchment. 
  2. Cut cauliflower into florets, then slice so one side of each floret is flat. 
  3. Arrange in a single layer in the greased pan. 
  4. Bake 10 minutes on the center rack.
  5.  Meanwhile, whisk together the soy sauce, sweetener, vinegar, garlic, sesame oil, and ginger in a saucepan. Bring to a boil.
  6. While waiting, stir together the cornstarch and water until cornstarch dissolves fully, then slowly whisk this into the saucepan as soon as it boils. 
  7. Turn heat to medium and cook 2 minutes, stirring more frequently once it returns to a boil. Cook until thick. You can also make the sauce ahead of time if desired, and it thickens more as it sits in the fridge. 
  8. Flip cauliflower florets and bake 10 additional minutes. If desired, you can now move the pan to the top rack and broil 1-2 minutes. 
  9. Pour sauce over florets. Sprinkle sesame seeds and optional scallions on top, and serve.

Vegan Spicy Glazed Popcorn Broccoli

These vegan spicy glazed popcorn broccoli! Crunchy and baked this broccoli is undeniably amazing. A perfect and cruelty free way to replace popcorn chicken! This super easy recipe takes less than 30 minutes start to finish and will impress everyone!


All those classic nooks and crannies that make popcorn chicken crunchy and super addictive are not lost in this vegan translation. Vegan buttermilk is used to make the dry ingredients crumbly. Those crumbles are pressed onto the broccoli to give it that popcorn feel and taste! 



This popcorn broccoli is totally poppable! The spicy glaze on this broccoli is amazing, but the popcorn broccoli without the glaze is amazing too. They are perfect little nuggets that can be dipped in any of your favorite dips. My daughter loves them, without the spicy glaze. So, I usually just do half with the glaze and half without.  She dips hers in ketchup and BBQ sauce!

Vegan Spicy Glazed Popcorn Broccoli Recipe

Ingredients
Popcorn Broccoli
  • 2 Cups Broccoli florets
  • 1 Cup Non dairy milk, I used almond milk
  • 1 Teaspoon Apple cider vinegar
  • 1 Teaspoon Hot sauce
  • 3/4 Cup All purpose flour
  • 1/4 Cup Panko bread crumbs
  • 2 Tablespoons Corn starch
  • 1/2 Teaspoon Baking soda
  • 1/2 Teaspoon Garlic powder
  • 1 Teaspoon Salt
Spicy Glaze
  • 1 Tablespoon Chili paste
  • 1/4 Cup Agave syrup
  • 2 Tablespoons Ketchup, I used organic
  • 2 Teaspoons Soy sauce
  • 1 Tablespoon Rice wine vinegar
Instructions
  1. Preheat oven to 375 degrees.
  2. Now, make vegan buttermilk by whisking together the non dairy milk, apple cider vinegar and hot sauce. Let sit for a few minutes to thicken up while you make the rest. 
  3. Next, in a medium sized mixing bowl, combine the flour, panko, corn starch, baking soda, garlic powder and salt. Whisk to combine. 
  4. Then, taking 2 Tablespoons of the vegan buttermilk, add that to the dry ingredients. Stir together, then use your hands to make wet crumbles. You should be able to press the mixture together, but it should easily crumble. Add a bit more buttermilk if needed. 
  5. Using the remaining vegan buttermilk, dip each broccoli floret into the vegan buttermilk, then put in the bowl with the crumbles and press the crumbles all over the broccoli, coating completely in the breading crumbles. 
  6. Then, place the broccoli onto a baking sheet sprayed with non stick spray. Repeat with all the broccoli florets. 
  7. Spray the tops of the broccoli with more non stick spray. Then bake at 375 degrees for 10-15 minutes. Flipping the broccoli half way through. Bake until brown and crispy. 
  8. While the broccoli is baking, make the glaze. In a small sauce pan. Combine all the glaze ingredients. Whisk and heat on medium low. Bring to a small bubble, whisk and then remove from heat. 
  9. When the broccoli is done, either toss with, drizzle with or dip the popcorn broccoli in the the glaze! Serve immediately! 

Healthy Chicken Burrito Wraps Recipe

The demand for quick-service Mexican food has increased in recent years. So, companies like Chipotle, Qdoba, and Taco Bell supply. Gathering inspiration from their offerings, we created these Healthy Chicken Burrito Wraps as an alternative. Whole wheat wraps, brown rice, and low fat cheese cut back on calories, and broccoli bulks up the nutrients. Avocado adds a healthy fat, while chicken breast rounds it out with lean protein. Best of all, you can make most of the ingredients yourself!



Healthy Chicken Burrito Wraps Recipe


Ingredients
  • 2 cups of chicken fillet, pre-cooked and shredded
  • 1 cup of Mexican rice or brown rice, pre-cooked
  • 1 avocado, diced
  • 1 cup of broccoli florets, cooked and chopped
  • 2 tablespoons of cilantro, chopped
  • 1 cup of grated sharp cheddar cheese, reduced-fat
  • 5 (8-inch) whole grain tortillas
  • 1 tablespoon of extra-virgin olive oil
Instructions
  1. In a mixing bowl mix together chicken, rice, avocado, broccoli, cilantro and cheddar cheese.
  2. Evenly distribute the mixture in the middle of the tortillas and fold them over tight, making sure the filling doesn’t fall out .
  3. Heat a grill pan or a skillet, add extra-virgin olive oil. Set the filled wraps on a pan and cook over medium-high heat for about 2-3 minutes on each side until tortillas are golden brown and cheese is melted inside.
  4. Serve warm.
